  • 9 lasagna noodles (traditional or no-boil)
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups béchamel sauce (made from 2 tbsp butter, 2 tbsp flour, and 2 cups milk)
  • 2 cups fresh spinach (or 1 cup frozen)
  • 1 cup sliced mushrooms
  • 1 medium zucchini, thinly sliced
  • 1 medium bell pepper, diced
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • A pinch of nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add mushrooms, zucchini, bell pepper, and spinach; cook until softened. Season with salt and pepper.
  3. In a saucepan, melt butter over medium heat. Whisk in flour until smooth, then gradually add milk while whisking until thickened. Season with salt and nutmeg.
  4. In a baking dish, layer ingredients starting with a thin layer of béchamel sauce, followed by noodles, ricotta mixture (mixed with herbs), sautéed veggies, mozzarella cheese, and more béchamel sauce. Repeat layers until all ingredients are used.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 15-20 minutes until golden brown.
  6. Let cool for at least 10 minutes before slicing and serving.
