  • 1/4 cup fresh cilantro, chopped (about 10g)
  • Juice of 1 lime (about 30ml)
  • 2 tablespoons soy sauce (or tamari for gluten-free) (30ml)
  • 1 tablespoon sesame oil (15ml)
  • Salt to taste

Instructions

  1. Wash and dry kale thoroughly; remove stems and chop into bite-sized pieces.
  2. If not pre-cooked, season chicken breasts with salt and pepper; grill or bake until fully cooked (20-25 minutes). Allow to cool and slice.
  3. In a large bowl, combine chopped kale, sliced chicken, shredded carrots, and cilantro.
  4. Whisk lime juice, soy sauce, sesame oil, and a pinch of salt in a small bowl to create the dressing.
  5. Pour dressing over the salad mixture and toss gently until evenly coated.
  6. Top with roasted peanuts just before serving for extra crunch.
