  • 3 to 4 lbs pork shoulder
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 2 teaspoons chili powder (adjust to taste)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 2 limes
  • 1 cup chicken broth

Instructions

  1. Prepare ingredients by chopping the onion and mincing the garlic.
  2. In a small bowl, combine cumin, paprika, chili powder, salt, and pepper. Rub the spice mixture over the pork shoulder.
  3. Place chopped onion and minced garlic at the bottom of the crockpot. Add the seasoned pork on top.
  4. Squeeze lime juice over the pork and pour chicken broth around it.
  5. Cover and cook on low for 8 hours or high for about 4 hours until tender.
  6. Remove pork from the crockpot and shred using two forks. Mix back into juices before serving.
