  • 1 cup whole-milk ricotta cheese
  • ½ cup grated Parmesan cheese

  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add chopped spinach and cook until wilted. Remove from heat and let cool.
  3. In a mixing bowl, combine ricotta cheese, grated Parmesan, sautéed spinach, salt, and pepper; mix well.
  4. Create pockets in each chicken breast by slicing them horizontally but not all the way through. Stuff with the ricotta-spinach mixture.
  5. Place stuffed chicken in the baking dish, brush tops lightly with olive oil, season with salt and pepper, and bake for 25-30 minutes until cooked through.
