  • 2 egg yolks
  • 1 cup ground almonds or hazelnuts
  • 3/4 cup raspberry or apricot jam

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat softened butter and granulated sugar until light and fluffy. Add egg yolks one at a time, mixing well.
  3. Gradually stir in flour and ground nuts until a smooth dough forms. Wrap in plastic wrap and refrigerate for at least one hour.
  4. Roll out chilled dough on a floured surface to about ¼ inch thick. Cut shapes with cookie cutters; ensure to create matching pairs with holes in the center.
  5. Place cutouts on prepared baking sheets and bake for 12-15 minutes until edges are lightly golden. Cool on wire racks.
  6. Spread jam on half of the cookies and top with remaining cutouts. Dust with powdered sugar before serving.
