  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup granulated sugar (divided)
  • 16 oz cream cheese (softened)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen raspberries

Instructions

  1. Preheat oven to 325°F (163°C) and grease a heart-shaped baking pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press into the bottom of the pan to form the crust.
  3. In another bowl, beat cream cheese and remaining sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gently fold in raspberries without breaking them apart too much.
  5. Pour the mixture over the crust and bake for about 25-30 minutes until set but slightly jiggly in the center.
