Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheet with parchment.
  2. Whisk flour, baking soda, and salt together.
  3. Cream softened butter, granulated sugar, and brown sugar until light.
  4. Beat in the egg, vanilla, lemon zest, and lemon juice.
  5. Fold dry mixture into wet until just combined.
  6. Scoop tablespoon portions onto sheet, spacing 2 inches apart.
  7. Bake 10–12 minutes until edges lightly golden.
  8. Cool 5 minutes on tray, transfer to wire rack, glaze if desired.
