  • 1 lb chicken breast
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 red onion, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Marinate chicken breast in olive oil, lemon juice, oregano, salt, and pepper for at least 30 minutes.
  2. Grill marinated chicken on medium-high heat for about 6-7 minutes per side until cooked through. Allow to rest before slicing.
  3. While chicken grills, dice cucumber, halve cherry tomatoes, slice olives and red onion; combine in a mixing bowl.
  4. Crumble feta over the vegetable mixture.
  5. Whisk together olive oil, lemon juice, oregano, salt, and pepper for the dressing.
  6. Slice grilled chicken and add to the bowl with vegetables and feta. Drizzle with dressing and toss gently.
