  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 4 oz soft goat cheese, crumbled
  • 2 tbsp olive oil
  • Fresh thyme or dill for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and scrub the beets, wrap each in foil, and place on a baking sheet.
  2. Roast the wrapped beets for 45-60 minutes until tender. Allow to cool, then peel and chop.
