Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup diced red bell pepper
  • 1 cup diced yellow bell pepper
  • 1 medium onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup corn kernels
  • 1 cup tortilla chips or sliced tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream
  • 2 tbsp olive oil
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Pan‑sear chicken until golden, set aside.
  3. Saute onions, peppers, and garlic until softened.
  4. Add tomatoes, corn, and spices; simmer 5 minutes.
  5. Layer tortillas, sear‑chicken, and sauce in baking dish.
  6. Top with cheddar and Monterey Jack.
  7. Cover with foil and bake 20 minutes.
  8. Uncover, dollop sour cream, bake 5 more minutes until bubbly.
  9. Cool 5 minutes before serving.
