- 2 boneless skinless chicken breasts
- 1 cup diced red bell pepper
- 1 cup diced yellow bell pepper
- 1 medium onion
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup corn kernels
- 1 cup tortilla chips or sliced tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ½ cup sour cream
- 2 tbsp olive oil
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Pan‑sear chicken until golden, set aside.
- Saute onions, peppers, and garlic until softened.
- Add tomatoes, corn, and spices; simmer 5 minutes.
- Layer tortillas, sear‑chicken, and sauce in baking dish.
- Top with cheddar and Monterey Jack.
- Cover with foil and bake 20 minutes.
- Uncover, dollop sour cream, bake 5 more minutes until bubbly.
- Cool 5 minutes before serving.
