  • 1 pound boneless, skinless chicken breast, sliced into bite-sized pieces
  • 1 cup jasmine or basmati rice
  • 1 ¾ cups water (for the rice)
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 12 tablespoons sriracha (adjust based on spice preference)
  • 1 cup bell peppers, chopped
  • ½ cup shredded carrots
  • 1 tablespoon oil (for sautéing)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the rice under cold water until clear. In a pot, combine rinsed rice and water. Bring to boil over medium heat. Reduce heat to low, cover, and simmer for about 15-20 minutes until water is absorbed.
  2. While the rice cooks, heat oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook for about 5-7 minutes until golden brown.
  3. In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha until smooth. Set aside.
  4. Once chicken is cooked through, add chopped bell peppers and shredded carrots to the skillet. Sauté for an additional 3-4 minutes until veggies are tender but crisp.
  5. Drizzle Bang Bang sauce over the chicken mixture in the skillet and toss until well coated. Cook for an additional minute.
  6. Fluff cooked rice with a fork and divide among bowls. Top each bowl with the chicken mixture and garnish with fresh cilantro.
