  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup white or brown rice
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • 1 cup sliced cucumbers
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers (any color)
  • Fresh cilantro for garnish
  • Salt and pepper to taste
  • 2 tbsp cooking oil

Instructions

  1. Cook rice according to package instructions. Once done, fluff with a fork and set aside.

  3. Lower heat and add the Bang Bang sauce (mayonnaise, sweet chili sauce, sriracha) to the skillet. Stir until all chicken is well coated and heated through.
  4. Slice vegetables thinly for added texture.
  5. To serve, layer rice in bowls, top with saucy chicken, add fresh veggies, and garnish with cilantro.
