Perfect for family feast nights, this recipe not only nourishes but also encourages togetherness around the dinner table.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 cup long grain rice
  • 1 cup chicken broth (low-sodium)
  • 1 medium onion, diced
  • 1 cup bell peppers (mixed red and green), diced
  • 2 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 green onions, sliced for garnish

Instructions

  1. In a large skillet over medium heat, heat olive oil. Sauté diced onion and bell peppers until soft (about 5 minutes), then add minced garlic and cook for an additional minute.
  2. Stir in rice and toast for about 2 minutes until fragrant.
  3. Pour in chicken broth and Cajun seasoning. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until rice is tender.
  4. Fold in shrimp, cover again, and cook for another 5 minutes until shrimp are pink and opaque.
  5. Remove from heat; let sit covered for 5 minutes. Fluff rice with a fork before serving and garnish with green onions.
