  • 8 oz fresh fettuccine pasta
  • 1 lb large peeled and deveined shrimp
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • Zest and juice of 2 lemons
  • 1 cup grated Parmesan cheese
  • 4 tbsp unsalted butter
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in a large pot of salted boiling water until al dente, about 8 minutes. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Sauté minced garlic until fragrant (about 1 minute). Add shrimp, season with salt and pepper, and cook until pink (3-4 minutes). Remove shrimp from skillet.
  3. In the same skillet, add chicken broth and bring to a simmer. Stir in heavy cream, lemon zest, and juice; simmer for about 5 minutes until slightly thickened.
  4. Return cooked fettuccine and shrimp to the skillet; toss to coat in the sauce, adding reserved pasta water as needed.
  5. Stir in grated Parmesan until melted. Serve immediately, garnished with extra lemon zest or parsley if desired.
