A decadent, one-pot Italian soup featuring juicy homemade meatballs in a rich, velvety cream broth with fresh spinach.

- 1 lb ground beef
- 0.5 lb ground pork
- 1/2 cup breadcrumbs
- 1 egg
- 2 tbsp Italian seasoning
- 4 cloves garlic, minced
- 1 medium onion, diced
- 6 cups beef broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 3 cups fresh baby spinach
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions
- In a bowl, combine ground beef, pork, breadcrumbs, egg, and half of the Italian seasoning. Form into small, bite-sized meatballs.
- Heat olive oil in a large pot over medium-high heat. Brown the meatballs on all sides, then remove and set aside.
- In the same pot, sauté the diced onion and minced garlic until softened and fragrant.
- Pour in the beef broth and the remaining Italian seasoning. Bring to a simmer.
- Return the browned meatballs to the pot and simmer for 10-15 minutes until cooked through.
- Reduce heat to low and stir in the heavy cream and parmesan cheese until smooth.
- Fold in the fresh baby spinach and stir for 1 minute until wilted. Season with salt and pepper.
