Ingredients

  • 1 lb boneless chicken thighs
  • 1 cup Greek yogurt
  • 2 tbsp tahini
  • 1 lemon (juice and zest)
  • 2 cloves garlic
  • 2 tsp dried oregano
  • 1 tbsp apple cider vinegar
  • Whole red onion (sliced)
  • 1 cup cherry tomatoes
  • Fresh basil leaves
  • Olive oil
  • Smoked paprika
  • Crushed red pepper flakes
  • Sea salt
  • Black pepper

Instructions

  1. Preheat oven to 375°F and grease a baking dish.
  2. Season chicken with salt, pepper, smoked paprika, and olive oil.
  3. Place chicken in dish and roast for 25 minutes, then flip and add crushed red pepper flakes.
  4. Whisk yogurt, tahini, lemon juice and zest, garlic, oregano, and apple cider vinegar together.
  5. After 30 minutes, remove chicken from oven, pour yogurt sauce over, top with onions and tomatoes.
  6. Re‑bake 10–12 minutes until chicken reaches 165°F and tomatoes blister.
  7. Rest 5 minutes, garnish with basil, serve.
