- 12 manicotti shells
- 15 oz ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach (chopped) or 1 cup frozen spinach (thawed and drained)
- 3 cups marinara sauce (your favorite brand)
- 2 large eggs
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook manicotti shells according to package instructions until al dente. Drain and cool slightly.
- In a bowl, mix ricotta cheese, half of the mozzarella, spinach, eggs, salt, and pepper until blended.
- Stuff each manicotti shell with the ricotta mixture using a piping bag or spoon.
- Spread some marinara sauce on the bottom of a baking dish. Place stuffed shells in the dish and cover with remaining marinara sauce. Sprinkle with leftover mozzarella and Parmesan cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden brown.
