  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 medium bell pepper (any color), sliced
  • 1 medium cucumber, sliced
  • 1 small red onion, thinly sliced
  • 2 green onions, chopped (for garnish)
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • Fresh cilantro (for garnish)

Instructions

  1. In a bowl, mix soy sauce, lime juice, garlic, and ginger. Add chicken pieces and marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Cook marinated chicken for 6-8 minutes until golden brown.
  3. Remove chicken and sauté bell peppers and red onion in the same skillet for about 3-4 minutes.
  4. In serving bowls, layer cooked rice as the base followed by sautéed vegetables. Top with sliced chicken, cucumber slices, and pineapple chunks.
  5. Drizzle reserved marinade on top and garnish with green onions and cilantro.
