- 1/4 cup freshly squeezed lemon juice
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper; cook for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, sauté minced garlic for about 30 seconds. Add lemon juice and heavy cream; stir to combine.
- Gradually mix in Parmesan cheese until melted. Adjust sauce consistency with reserved pasta water as needed.
- Add spinach to wilt, then return sliced chicken to the skillet. Toss with drained pasta until well coated.
- Serve immediately, garnished with extra Parmesan or lemon zest if desired.
