  • 8 oz fettuccine or linguine
  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper; cook for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds. Add lemon juice and heavy cream; stir to combine.
  4. Gradually mix in Parmesan cheese until melted. Adjust sauce consistency with reserved pasta water as needed.
  5. Add spinach to wilt, then return sliced chicken to the skillet. Toss with drained pasta until well coated.
  6. Serve immediately, garnished with extra Parmesan or lemon zest if desired.
