Instructions
- Preheat your oven to 325°F (160°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the prepared dish.
- In another bowl, beat cream cheese until smooth. Gradually mix in sugar, then add eggs one at a time, followed by vanilla and cinnamon until well blended.
- Pour the cheesecake filling over the crust and bake for 25-30 minutes until set around the edges but slightly jiggly in the center.
- Allow cooling completely at room temperature before refrigerating for at least four hours or overnight. Cut into bite-sized squares and serve chilled.
