  • 1 package (16 oz) phyllo dough
  • 1 lb fresh spinach, washed and chopped
  • 8 oz feta cheese, crumbled
  • 1 medium onion, chopped
  • 2 tbsp fresh dill, chopped
  • 2 large eggs, beaten
  • 4 tbsp olive oil or melted butter (for brushing)

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a skillet over medium heat, sauté the chopped onion in olive oil until translucent. Add spinach and cook until wilted; remove from heat and cool.
  3. 3. In a bowl, combine cooled spinach mixture with feta cheese, beaten eggs, and dill. Mix well.
  4. 4. On a clean surface, layer six sheets of phyllo dough, brushing each with olive oil or melted butter.
  5. 5. Spoon the filling along one edge of the layered phyllo. Fold the sides and roll tightly into a log shape. Place seam-side down on a baking sheet lined with parchment paper.
