Ingredients
- 1 package (16 oz) phyllo dough
- 1 lb fresh spinach, washed and chopped
- 8 oz feta cheese, crumbled
- 1 medium onion, chopped
- 2 tbsp fresh dill, chopped
- 2 large eggs, beaten
- 4 tbsp olive oil or melted butter (for brushing)
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. In a skillet over medium heat, sauté the chopped onion in olive oil until translucent. Add spinach and cook until wilted; remove from heat and cool.
- 3. In a bowl, combine cooled spinach mixture with feta cheese, beaten eggs, and dill. Mix well.
- 4. On a clean surface, layer six sheets of phyllo dough, brushing each with olive oil or melted butter.
- 5. Spoon the filling along one edge of the layered phyllo. Fold the sides and roll tightly into a log shape. Place seam-side down on a baking sheet lined with parchment paper.
- 6. Brush the top with olive oil or melted butter and bake for 30-35 minutes until golden brown.
