- 1/3 cup granulated sugar

- 1 tsp vanilla extract
- 1 cup fresh raspberries (or frozen, thawed and drained)
- 1/2 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
Instructions
- Preheat the oven to 325°F (163°C). Grease a muffin tin or use paper liners.
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press this mixture into the bottom of each muffin cup to form an even crust layer.
- In another bowl, beat cream cheese until smooth. Gradually add sugar and mix until combined. Incorporate the egg and vanilla extract until fully blended.
- Gently fold in raspberries and pour the mixture over each crust in the muffin tin until filled nearly to the top.
- Bake for 20-25 minutes or until set but slightly jiggly in the center. Allow cooling completely before refrigerating for at least 4 hours or overnight.
- Once chilled, remove from muffin tin and garnish with additional raspberries if desired before serving.
