  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries (or frozen, thawed and drained)
  • 1/2 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a muffin tin or use paper liners.
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press this mixture into the bottom of each muffin cup to form an even crust layer.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar and mix until combined. Incorporate the egg and vanilla extract until fully blended.
  4. Gently fold in raspberries and pour the mixture over each crust in the muffin tin until filled nearly to the top.
  5. Bake for 20-25 minutes or until set but slightly jiggly in the center. Allow cooling completely before refrigerating for at least 4 hours or overnight.
  6. Once chilled, remove from muffin tin and garnish with additional raspberries if desired before serving.
