  • 1 can (15 oz) canned white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Start by dicing your onion and mincing garlic. This will enhance their flavor when cooked slowly in the crockpot.
  2. Place the chicken breasts at the bottom of your crockpot followed by onions, garlic, canned white beans, green chilies, cumin, and chicken broth.
  3. Sprinkle salt and pepper over all ingredients according to your taste preferences.
  4. Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours until chicken is fully cooked and shreds easily.
  5. Once cooked, remove chicken breasts from the pot and shred them using two forks before returning them back into the chili.
