  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 2 medium sweet potatoes
  • ½ cup full-fat coconut milk
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut cauliflower into thick 'steaks,' about one inch wide. Keep florets intact on each end.
  3. In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper. Brush over both sides of the cauliflower steaks.
  4. Place steaks on the baking sheet and roast for 25–30 minutes, flipping halfway until golden brown and tender.
  5. Peel and cube sweet potatoes, boil in salted water until fork-tender (15–20 minutes).
  6. Drain sweet potatoes, return to pot, add coconut milk and lemon juice; mash until smooth and creamy.
  7. Serve by placing a cauliflower steak next to a scoop of mashed sweet potatoes.
