- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 2 medium sweet potatoes
- ½ cup full-fat coconut milk
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut cauliflower into thick 'steaks,' about one inch wide. Keep florets intact on each end.
- In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper. Brush over both sides of the cauliflower steaks.
- Place steaks on the baking sheet and roast for 25–30 minutes, flipping halfway until golden brown and tender.
- Peel and cube sweet potatoes, boil in salted water until fork-tender (15–20 minutes).
- Drain sweet potatoes, return to pot, add coconut milk and lemon juice; mash until smooth and creamy.
