  • 1/2 cup (75g) feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dill (fresh or dried)
  • Zest of 1 lemon
  • 1/2 cup (50g) panko breadcrumbs
  • Salt and pepper to taste
  • Olive oil for drizzling
  • 1/2 cup (75g) feta cheese, crumbled
  • 2 tbsp olive oil
  • Freshly cracked black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, minced garlic, oregano, dill, lemon zest, panko breadcrumbs, salt, and pepper. Mix until well combined.
  3. Form the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes until golden brown and cooked through.
  5. While the meatballs are baking, blend feta cheese with olive oil until smooth; season with black pepper.
