- 1 package phyllo dough (16 oz)
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 small onion, finely chopped
- 2 tablespoons fresh dill, chopped (or 1 tablespoon dried)
- 1 large egg
- 4 tablespoons extra virgin olive oil
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, sauté the onion in 2 tablespoons of olive oil until translucent. Add the spinach and cook until wilted. Remove from heat and let cool slightly before mixing in the feta cheese, dill, egg, salt, and pepper.
- Unroll the phyllo dough and cut it into strips about 3 inches wide. Brush each strip lightly with olive oil. Place a spoonful of filling at one end of each strip and fold over to form triangles, sealing in the filling.
- Arrange the triangles on the prepared baking sheet and brush tops with remaining olive oil. Bake for 25-30 minutes or until golden brown and crispy.
- Let cool slightly on wire racks before serving warm or at room temperature.
