  • 2 large eggs

  • 1/4 cup cinnamon sugar mixture (combine 2 tbsp sugar with 1 tsp cinnamon)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In one bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  4. Add pumpkin puree and eggs one at a time; mix well before stirring in sour cream.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. In another bowl, combine oats with the cinnamon-sugar mixture for the topping.
  7. Spoon cookie dough onto prepared sheets and sprinkle streusel on top.
