  • 4 medium orange bell peppers
  • 1 lb ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce (no added sugars)
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice tops off bell peppers and remove seeds. Carve faces into each pepper to create jack-o'-lanterns.
  2. In a skillet over medium heat, cook chopped onion until translucent (3-4 minutes). Add minced garlic and ground meat; cook until browned. Drain excess fat.
  3. Stir in cooked rice and tomato sauce. Season with salt, pepper; let simmer for 5 minutes.
  4. Stuff each pepper with the meat-rice mixture tightly but do not overstuff.
  5. Place stuffed peppers in a baking dish, sprinkle cheese on top, cover with foil, and bake for 30 minutes. Remove foil for the last 5 minutes to melt cheese.
