- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 2 cups fresh spinach
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients by dicing the chicken and mincing the garlic.
- In a large skillet over medium heat, heat olive oil. Add the diced chicken, season with salt and pepper, and sauté for 6-8 minutes until golden brown. Remove from skillet and set aside.
