- 1 lb beef sirloin, cubed
- 8 oz cremini mushrooms, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1/2 cup sour cream
- 2 tbsp all-purpose flour
- 1 tbsp Worcestershire sauce
- 2 tbsp vegetable oil
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Sear the beef cubes in oil over medium-high heat until browned on all sides. Remove beef and set aside.
- Sauté diced onions and sliced mushrooms in the same pot until golden brown.
- Stir in minced garlic and cook for 60 seconds.
- Sprinkle flour over the vegetables and stir for 2 minutes to cook out the raw flour taste.
- Slowly pour in beef broth and Worcestershire sauce, scraping the bottom of the pot to release browned bits.
- Return the beef to the pot and simmer on low for 20-25 minutes until the meat is tender.
- Remove from heat and stir in the sour cream until smooth. Garnish with parsley.
