  • 2 tablespoons olive oil
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, quartered
  • 2 medium onions, chopped
  • 2 cups beef broth (homemade preferred)
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the chuck roast generously with salt and pepper on all sides.
  3. In a large Dutch oven, heat olive oil over medium-high heat and sear the chuck roast for about 4-5 minutes per side until browned.
  4. Remove the roast from the pot and add chopped onions and minced garlic. Sauté until onions are translucent.
  5. Return the roast to the pot along with carrots, potatoes, beef broth, thyme, and rosemary.
  6. Cover with a lid and transfer to the oven. Cook for approximately 3-4 hours until fork-tender; check occasionally.
