Description

These Cinnamon Brown Sugar Waffles are a deliciously spiced breakfast treat featuring a perfect balance of warm cinnamon, light brown sugar, and nutmeg. Crispy on the outside and fluffy on the inside, they are elevated with whipped egg whites for extra lightness. Served warm with maple butter and syrup, they make the perfect indulgent morning meal for family or guests.

Ingredients

Scale
  • 420 ml whole milk
  • 3 large eggs, yolks and whites separated
  • 80 ml vegetable oil
  • 2 teaspoons vanilla extract
  • 190 g all-purpose flour, spooned and leveled
  • 65 g cornstarch
  • 55 g light brown sugar, lightly packed
  • 1 tablespoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon coarse salt
  • Maple butter
  • Maple syrup, warmed

Instructions

  1. Preheat the waffle iron to a medium-high to high setting to ensure the waffles cook evenly and become crisp on the outside.
  2. In a medium bowl, whisk together the whole milk, egg yolks, vegetable oil, and vanilla extract until the mixture is smooth and well blended. Set this mixture aside.
  3. In a large bowl, whisk together the all-purpose flour, cornstarch, light brown sugar, ground cinnamon, ground nutmeg, baking powder, baking soda, and coarse salt until they are thoroughly combined and evenly blended.
  4. In a separate clean bowl, beat the egg whites with an electric mixer until stiff peaks form. This step is key to creating light and fluffy waffles.
  5. Pour the wet ingredients into the bowl containing the dry ingredients. Stir gently with a spatula until just combined, making sure to scrape the bottom of the bowl to incorporate all the dry flour mixture.
  6. Carefully fold the whipped egg whites into the batter using a spatula. Be gentle to preserve the airy texture created by the whipped whites, but ensure the batter is just combined.
  7. Ladle or scoop the batter into the preheated waffle iron, filling each section about two-thirds to three-quarters full. Close the lid and cook until the waffles are crisp and golden brown on the outside, approximately 5 minutes per batch. Repeat this process until all the batter is used.
  8. Serve the waffles warm topped with maple butter and warmed maple syrup for a delightful breakfast experience.
