  • 1 can (13.5 oz) coconut milk
  • 1 lb chicken breast, diced
  • 2 tbsp curry powder (adjust to taste)
  • 1 cup bell peppers, chopped
  • 1 cup carrots, sliced
  • 1 cup snap peas
  • 2 tbsp vegetable oil
  • Juice of 1 lime
  • Fresh cilantro, for garnish

Instructions

  1. Cook rice noodles according to package instructions until al dente, then drain and set aside.
  2. In a large skillet over medium heat, add vegetable oil and sauté diced chicken until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add chopped bell peppers, carrots, and snap peas; sauté for about 3-4 minutes until slightly tender but still crisp.
  4. Pour in coconut milk and stir in curry powder; bring to a simmer for about 5 minutes.
  5. Add cooked chicken back into the skillet and stir well to coat everything in the sauce; simmer for another 2-3 minutes until heated through.
  6. Toss in the cooked rice noodles gently until evenly combined. Remove from heat and drizzle with fresh lime juice before serving.
