  • 15 ounces diced tomatoes, drained
  • 1 can (4.5-ounce) chopped green chilies, drained and chopped finely
  • 8 ounces sour cream or Mexican-style crema fresca sauce or cottage cheese (optional)
  • 2 cups grated cheddar cheese (Mexican blend is best), more for sprinkling on top if desired  


Step 1: In a large skillet over medium-high heat, brown the chicken with ground black pepper until cooked (4 to 6 minutes).

Step 2: Add the salsa and diced tomatoes to the pan and mix well before adding the taco seasoning. Cook for another 10 minutes or until desired consistency is reached before stirring the cheese.

Step 3: Prepare four tortillas by layering your favorite fillings: Fill one tortilla with chicken, salsa, diced tomatoes, and green chilies. Place on top of a second tortilla. Repeat the process with the remaining tortillas.

Step 4: Sprinkle cheddar cheese on top of each tortilla. For bake: Bake at 325°F for 10 minutes or until heated through and cheese is melted. Serve and enjoy!

Chicken Taco casserole without soup
