Step 1: Wash the chicken and pat dry.
Step 2: Heat olive oil over medium-high in a large sauté pan. Add the onion and cook until softened, about 2 minutes. Add the chicken and stir to coat with the onions.
Season with salt and pepper to taste. Add one cup of water to deglaze the bottom of your pan. Cover your pan, so it does not splatter when you stir in your cumin, oregano, and salsa verde.
Step 3: Add the remaining water to the pot and place the pot on the stovetop. Put your lid on, lock and seal.
Step 4: Set heat to HIGH and bring pressure up to 10 PSI within 25 minutes when your pot indicator says it is done.
Step 5: Adjust heat to LOW and keep warm until ready to serve.
