  • 4 large eggs
  • 1 cup salsa (fresh pico de gallo preferred)
  • 1 can (15 oz) black beans, rinsed and drained
  • ½ cup crumbled feta or cotija cheese

Instructions

  1. Heat about half an inch of oil in a skillet over medium-high heat. Fry the corn tortillas one at a time until golden brown and crispy on both sides. Drain on paper towels.
