Ingredients

  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 1/2 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
  2. In a bowl, mix oats, flour, 1/2 cup sugar, and melted butter until crumbly. Reserve 1 cup for topping.
  3. Press remaining mixture into the bottom of the baking dish as the crust.
  4. In another bowl, whisk eggs, lemon juice, zest, and remaining sugar until smooth. Pour over the crust.
  5. Sprinkle reserved oat mixture on top and bake for 30-35 minutes until golden brown.
  6. Cool completely before slicing into squares and serve.
