- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter (melted)
- 2 large eggs
- 1/4 cup fresh lemon juice
- Zest of 2 lemons
- 1/2 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
- In a bowl, mix oats, flour, 1/2 cup sugar, and melted butter until crumbly. Reserve 1 cup for topping.
- Press remaining mixture into the bottom of the baking dish as the crust.
- In another bowl, whisk eggs, lemon juice, zest, and remaining sugar until smooth. Pour over the crust.
- Sprinkle reserved oat mixture on top and bake for 30-35 minutes until golden brown.
- Cool completely before slicing into squares and serve.
