- 1/4 cup freshly squeezed lime juice
- 1/2 cup chia seeds
- 3 tbsp maple syrup
- 1/2 cup unsweetened coconut flakes
Instructions
- Combine chia seeds, coconut milk, and maple syrup in a bowl. Stir well and let sit for 10 minutes to thicken.
- Mix in lime juice until fully incorporated.
- In an 8×8 inch baking dish lined with parchment paper, pour half the chia mixture to create the first layer.
- Add coconut flakes on top of the chia layer and press gently.
- Pour the remaining chia mixture over the coconut flakes and smooth it out evenly.
- Cover with plastic wrap and refrigerate for at least four hours or overnight until set. Slice into bars and serve chilled.
