Ingredients

  • 1 can Mediterranean tuna (5 oz), drained and flaked
  • 1 cup cooked chickpeas (or canned, rinsed and drained)
  • ½ cup Kalamata olives, pitted and sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra‑virgin olive oil
  • Salt and freshly ground pepper, to taste

Instructions

  1. Drain the tuna and gently flake it into a medium bowl.
  2. Add chickpeas, olives, tomatoes, cucumber, and red onion to the bowl.
  3. Sprinkle chopped parsley and lightly stir.
  4. Whisk lemon juice, olive oil, salt, and pepper into a dressing.
  5. Pour the dressing over the salad and toss to coat.
