Description

A traditional Mexican white stew featuring tender pork shoulder and hearty hominy, served with a variety of fresh, crunchy toppings.


Ingredients

  • 3 lbs pork shoulder, cut into 2-inch chunks
  • 2 cans (29 oz each) white hominy, drained and rinsed
  • 1 large white onion, chopped
  • 4 cloves garlic, minced
  • 8 cups water or chicken stock
  • 1 tbsp dried Mexican oregano
  • 2 tsp sea salt
  • Toppings: sliced radishes, shredded cabbage, lime wedges, diced onion

Instructions

  1. Sear the pork chunks in a large pot over medium-high heat until browned on all sides.
  2. Add chopped onion and minced garlic, sautéing until translucent.
  3. Pour in water or stock and stir in the dried oregano.
  4. Simmer on low heat for approximately 2 hours until meat is tender.
  5. Add the rinsed hominy to the pot and simmer for another 45 minutes.
  6. Season with salt to taste and serve hot with fresh toppings.
