How to make Andhra Fried Chicken
- 1 kg of potatoes (cut into 3 cm squares)
- 1/2 tsp turmeric powder
- Approx. 3 cups of water (for blanching cut-up vegetables)
- 6-8 green chilies (dried or ripe)
- Salt to taste
Step 1: Blanch the potatoes in hot water until they get tender. Meanwhile, prepare hot oil to fry with.
Step 2: Heat oil in a pan and drop in the potatoes at once. Toss them around and flip them over, so they don’t get burnt on one side. Fry them until they become golden brown. Remove them from the oil and spread them on kitchen paper to absorb the oil.

Step 4: Now, you can choose whether to dry-roast or steam your Andhra Fried Chicken. Dry-roast them if they are not too soft, while steaming will give your chicken (or vegetables) a chewier texture. Rinse and drain the potatoes.
Step 5: Bring a pan with empty water to boil. Put the potatoes in boiling water and cook for about 15 minutes.
Step 6: Transfer the potatoes from the boiling water to a colander with cool running water until they are cool enough to handle.
Step 7: Now, it is time to saute vegetables! Heat oil in a wok or pan on low heat, add green chilies, and fry for about 20 seconds. If you are cooking spicy food, this is where you would throw in your chili powder.
Step 8: Add the potatoes and stir with a spatula or wooden spoon. Reduce heat to medium-low and fry for about five minutes or until the potatoes are browned nicely on all sides.
Step 9: Remove from heat, add salt and mix well.
Step 10: Andhra Fried Chicken is ready to be served. Sprinkle a pinch of hing (asafoetida) on your dish before serving to reduce stomach gas.
