- 12 ounces jumbo pasta shells
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 4 cups fresh spinach, roughly chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon dried Italian seasoning
- Salt and freshly ground black pepper, to taste
- 2 cups marinara sauce
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 375°F (190°C). Salt a large pot of water and cook the jumbo shells until just al dente—about 7 minutes. Drain and let cool.
- Heat the olive oil in a skillet over medium heat. Sauté the onion and garlic until translucent, about 3 minutes.
- Add the spinach, cooking until wilted. Remove from heat and press out excess moisture with a clean towel.
- In a large bowl, combine the ricotta, mozzarella, Parmesan, sautéed spinach mixture, eggs, Italian seasoning, salt, and pepper. Stir until well blended.
- Fill each shell with the ricotta mixture, laying them flat in a greased baking dish. Cover the dish with the marinara sauce.
- Bake covered for 20 minutes, then uncover and bake another 10 minutes or until the top is golden and bubbly.
- Remove from oven, let rest 5 minutes, then garnish with fresh basil before serving.
