- 4 large roasted red peppers (about 560g)
- 1 medium onion, chopped (about 150g)
- 2 cloves garlic, minced
- 4 cups (960ml) vegetable broth (low-sodium)
- 1 cup (120g) shredded Gouda cheese
- 1/2 cup (120ml) heavy cream (or plant-based cream)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients by roasting the red peppers until charred on all sides. Once cooled, peel off the skins and set aside.
- In a large pot over medium heat, add olive oil. Sauté chopped onion until translucent, then add minced garlic and cook for an additional minute.
- Add roasted red peppers and vegetable broth to the pot. Bring to a simmer and cook for about 10 minutes.
- Use an immersion blender or transfer to a blender in batches; purée until smooth and creamy. Return to the pot.
- Stir in shredded Gouda cheese until melted. Gradually add cream while stirring until well combined.
