  • 4 large roasted red peppers (about 560g)
  • 1 medium onion, chopped (about 150g)
  • 2 cloves garlic, minced
  • 4 cups (960ml) vegetable broth (low-sodium)
  • 1 cup (120g) shredded Gouda cheese
  • 1/2 cup (120ml) heavy cream (or plant-based cream)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by roasting the red peppers until charred on all sides. Once cooled, peel off the skins and set aside.
  2. In a large pot over medium heat, add olive oil. Sauté chopped onion until translucent, then add minced garlic and cook for an additional minute.
  3. Add roasted red peppers and vegetable broth to the pot. Bring to a simmer and cook for about 10 minutes.
  4. Use an immersion blender or transfer to a blender in batches; purée until smooth and creamy. Return to the pot.
  5. Stir in shredded Gouda cheese until melted. Gradually add cream while stirring until well combined.
  6. Season with salt and pepper to taste before serving hot.
