  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 4 garlic cloves, unpeeled
  • 1 medium onion, chopped
  • 4 cups (960ml) vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • ½ cup (120ml) cream or coconut milk
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place diced sweet potatoes and whole garlic cloves on the baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for about 25-30 minutes until tender.
  3. In a large pot over medium heat, sauté the chopped onion until translucent (about 5 minutes).
  4. Add the roasted sweet potatoes and garlic (squeezed from skins) into the pot along with vegetable broth. Bring to a simmer.
  5. Use an immersion blender to puree the soup until smooth, or transfer in batches to a blender. Stir in cream or coconut milk; season to taste before serving hot.
